Self-cermenting bioprotection culture containing selected strains of Lactobacillus rhamnosus with milk proteins and lactose, for semi-direct milk inoculum for the production of Greek type yoghurt.

Function and characteristics

Culture of selected yeast strains and bioprotection to meet specific technological needs, indicated to contain the development of unwanted microorganisms with very slow acidification. The development of undesirable microorganisms such as yeasts, moulds, heterofermentative lactobacilli and sporigenic bacteria is inhibited. By adding the preparation to the pasteurized milk you get a compact yogurt.
